    Just out of interest, does anyone with a land rover such as a range rover classic (any with carpeted footwells) worry about getting stuff like mud, muddy water, etc in the footwells and having the carpets soak it all up and stinking the vehicle up for eternity?     Maximum wading depth for a defender (according to land rover) is just over 1.5 feet. I would definitely recommended a snorkel. You might also look into waterproofing electronics, and fitting breather extension pipes for the transfer case, but someone with more knowledge of that stuff than me...

    For the hi lift jack: The only place I can think of is the roof rack... if you have one I'm not sure whether "back door" means to the spare tire or directly to the door itself... I've seen a few bolted to the front bumper (never seen this on a defender, but one would assume that it is possible)...
