Update. water problem fixed, it was 100% an airlock. Took stat out again boiled it in a pan of water and it opened perfectly. I removed the brass bypass valve and drulled an 8mm hole in the stat body. Refitted and recharged the cooling system. All good no more erratic over heating issues.

Not quite. The oil level is static at approx 8mm above top mark on dip stick. At last oil change a bit to much was put in and I was to lazy to drop it again and refill. When I say it's running hot, it shows temp on guage as just above the center mark, which is higher than it used to run before...
