Hi what would I need to change to put a 300tdi engine in my 1993 defender 3.5 v8 ?

Firstly... Slap yourself for even suggesting something so daft 
Secondly, you need different mounts, a 300tdi gearbox and different propshafts.
You will also need a new radiator and intercooler.
The V8 is a better engine in just about every way. Stick with it.

200 tdi would basically slot in better than the 300tdi as the engine mounts are the same.
You would have to change the nozzle you pick up at the petrol station and find a way of spending the extra money left in your wallet.

Cheaper and simpler to convert to lpg while keeping the benefits of the V8
