i think im fairly aware of the risks since its my job,you buy them from a reputable supplier with a guarantee, most do have to consider the cost
You are right James on my discovery to spend 10k on a car that with the new engine would at most get 4 to 5k would not make sense but in the right car, I have kept my old engine and would like to rebuild it with the AMC head one day (the replacement engine is getting up to 200k) but as oil pump bolt went could be a lot of damage, ran but sounded like a bag of nails, maybe a project for retirement,

Their quote actually includes everything you could ever imagine. They are obviously making a lot on the parts though, and I'm not sure it would take 24 hours to do the job. It would be well worth getting a few other quotes unless you are stuck with that garage for any reason, a quick google confirms other people also think he's a bit expensive. I'd also be carefully looking at the rest of the vehicle and weighing if whether or not it's worth the expense, and what went wrong with your last engine to get you here, and what other stuff you could potentially get talked into having done at the same time.

For the clutch I would highly recommend you look at LOF Clutches, they are incredibly well made and there is little or no cost difference. Just buy a decent second hand engine, as James Martin said, he works on them day in day out! Just make sure it starts well from cold/hot and check the cylinder balances and do all the little bits while you’re there like manifold stud injector seals etc,
