not used on the road tyres, but I used to recut tyres for banger/stock car racing once upon a time.
took lots of punishment and as the op said, know what your doing with depth of cut and depth to the cords of the tyre casing.
my favorite was to recut a very good treaded pair to resemble a speedway type tread,
as we both raced on the same shale oval raceways.
often refurred to as "cadbury block tread"
