I wouldnt describe the sound wheel bearings make as whistling, more like a howl. And brake work shouldnt disturb the wheel bearings.
What sort of 110? And what did you have done to the brakes?

OK. What did you have changed, Pads, Discs, Calipers?
And is it an old Defender with drums on the rear, or a new one with discs all round?
And are you sure it isnt just something in, or on, the rear body, whistling in the air stream?
its a 57 plate not sure if pads or discs. We took it back they took it all apart yet they say there is nothing wrong. But every time we drive it nearly always makes the loud noise, when put foot on brake it stops. I thought it was the brake, the garage say no.

Discs all round. Could be a small stone or bit of grit riding against the disc under one of the pads. Or trapped behind a brake shield, if you have them.
Try finding a quiet place, and reversing rapidly. And try driving a few miles without applying the brakes, then slowly come to a stop, and check the discs to see if any are heating up. If not, just drive it for a while and it may go away as the brakes bed in.

Might behove you to find a friend who knows a thing or two, get it jacked up on stands and spin the wheels tos ee if there is an underlying problem.
Very difficult to diagnose a noise like this. can you post a video at some point?
