I've recently purchaced a defender after being without a landrover for 10 years, don't know how i did it, and would like to change the tyres from 205 70s to 235 85s (Colway AT) is this a good move for mostly road use?

For mostly road use, why do you need ATs? Consider a road biased tyre - LR fit General Grabbers in that size.

If your heart is set on ATs, the Colway AT tread is a copy of the BF Goodrich AT. The BFGs may be more expensive, but the rubber wears much better. I know someon who had 70,000+miles out of a set of BFGs!!!!!!

i have a 90 def . I have stuck with the 205's with avon a/t's simply because i can't fault them. if you grow to 235's your fuel comp will drop and and there will be more noise. being a tree fella i'm off road about 20% of the time and these tyres do ok.

Changing to 235s from 205s will increase your fuel consumption by about 15%.

Road noise I think probably depends on tread pattern more than anything - but the fuel is an importnat issue that people don't consider highly enough.
