Just had the clutch & slave cylinder replaced on my 2002 TD4. The clutch now bites just off the carpet. I was told it will wear in. Is this normal? Can it be adjusted?

That's bollocks. Hydraulic clutch systems are effectively self adjusting. It won't 'wear in'.

Hopefully it has got air in the system and will improve with a bleed.
 
It is possible that it may want bleeding but get them to put another one in if this doesnt make it better. I had this problem on my TD4 October 2003 at 58000 miles and it was still under Land Rover guarantee so it was done for nothing. I was told the same by the LR agent I bought it from that it would get better it didn't and took it to a different Land Rover agent who changed it straight away. The first L R dealer did not want to be bothered with it.There is no adjustment and to do the job the whole clutch bell housing has to come off as the slave cylinder is inside it.
