The height sensors are all 5v, so they'll plug straight into the analogue inputs on an Arduino (the uno has 5 of them). The valves & compressor relays require 12v to switch them on, so you need some sort of optoisolater or a current sensor to monitor those.

My main blocker at the moment is sourcing the 35 pin connector so I can make a pass through type setup rather than butchering the existing wiring loom

You can connect to the EAS ECU through the OBD connector to monitor live readings. Doubt it'll halp with dancing though. That's usually a dodgy connection somewhere or the height sensors need calibrating.
 
I'd be interested to see what insurance company had to say about installing a homemade ecu on the eas in event of a claim!

Yep just so, there are things called construction and use regulations. Not much bothered with in general as many of the off road lads will know, but a good get out for an insurance company if an undeclared modification.
 
Bit more info in case anyone is curious....

The delay relay picks up the 'ready to send' pulse from a serial cable plugged into the OBD connector (pin 1 OBD -> pin 3 delay relay) which causes the ECU to power cycle during the serial initialisation, which puts it into 'diagnostic mode'.

If you don't have the delay relay, you can just power cycle the ECU then immediately send the initialisation bytes.
 
There's a rubber seal around the connector end, and the rest of the enclosure is one piece of metal...wouldn't be surprised if it's completely airtight once assembled
If it was completely airtight, condensation could be a problem unless it was assembled in very low humidity conditions or purged with Nitrogen.
