wondering if its possible to get the plastic arch trims and front plastic a bar cheap enough to modernise it up a bit?

Get rid of the egr valve (search on here for past posts) as soon as you get it otherwise it will feel like a slug towing and be drinking fuel as if it is going out of fashion. I am now on my second 300tdi and use it for the same job (towing trailers with rally cars on) and have not yet suffered any problems at all, just keep on top of the servicing. Be careful with the "A" bar as it can block out the clean air needed for the intercooler (I have a small electric fan positioned within the cowling to give additional cooling for long drag hills that require more torque/power out of the engine). Mines done 150k and still pulls great and I do on average 600miles per week, so mileage is nothing to worry about. With towing make sure that your rear discs and pads are checked regularly as it tends to eat them faster than the fronts. Don't race it through the gearbox but just take your time and you will have no problems with transfer box / diffs / synchro.

Rear windows is an easy fix, it will be a dry joint on the electric window control board - located in the glove box. Try the technical section of discoweb.org -- for the fix. Takes about 30 mins from start to finish if you have your soldering iron handy.

Rear sunroof is probably a sticky motor from lack of use, you might be able to strip and lubricate - depends on if you think you'll bother using it as to whether it is worth the hassle.
