While I was working on the heated seat conversion I removed a black and green wire out of the middle plug connected to my HVAC unit and realised it was the wrong thing to do and plugged it all back in , ever since I did that my external temperature gauge reads -17° and my parking heater has decide to turn itself on.

I've plugged everything back in as it was and still no luck

Any suggestions welcome.

Would disconnecting the battery and leaving it for 10 minutes work?
Well I was thinking along those lines, though I am no specialist in the D3, @gstuart is your man for this.
I also had a feeling that touching the big positive and negative wires together came into it somewhere but deffo don't do that until you have had a post from him!

Reboot the whole car!!!

(puts hat and coat on and leaves!)
That is called a hard reset, disconnect battery leads from battery, join lead ends together for a few seconds, this discharges all the capacitors etc in everything on the vehicle, reconnect leads and thats is it.
Sometimes have to do this when you cannot get fault codes to clear, but you have just fixed the bloody thing!
