Edelbrock 600 on 5.0 V8 Defender 90

Hi Guy's, wander if somebody could help me - am running a 600 CFM edelbrock on my 5.0L rover, and at standard jetting its very rich, pulling nicely but stinking of fuel, had advice from V8Tuner to go for a 600 carb with my stage 3/4 heads and TVR cam - as 500 may run out of steam at high end, but now am not so sure - its in standard set up out of the box.

Have never re-jetted an edelbrock -is it a hard job? - how do I know which size jets to use? - and will it all be in vain and will I end up swapping for a 500? Dont fancy the expence of a new carb but sometimes you have to swallow your mistakes:-(
 
Have read that a 0.086 jet is recommended for a 4.6 RV8 - was wondering what the standard jet is (0.96 on edelbrock website??) - But mine in a 5.0???
