Anyone know if I can use one of the oil extractors to pull the oil out of a
Disco V8 through the dip stick?

Thanks,
Marc

Indeed. Oil extractors are only useful if a) you are so crippled you can't
access the drain plug, or b) the area below the engine is inaccessible, as
in a boat. You won't get all the old oil out, and there's no chance for the
sludge that forms in the sump to drain. From a maintenance point of view,
it's not a good idea, and I'll bet that by the time you have set it up,
connected it to the battery or mains supply, and set it in motion, you could
have crawled under, removed the drain plug and be having a cup of tea while
gravity does the work. Simplest is sometimes best.
