clutch problem!

200tdi 1992 Discovery.
Had recent new clutch.
Clutch has alot of travel before it engages with a very low biting point.
Master cylinder and slave cylinder has just been replaced and i was expecting a better clutch pedal performance but it is exactly the same???
Correctly bled.
There is only one other component i can see on the system and that is a large brass coloured 'disc' on the slave mounting plate that fluid passes through. What is it and would it make any difference to the clutch performance?
Also my clutch pedal is a little lower than the brake pedal, should it be level and if so how?

Problem solved!
There is a funny shaped bolt securing the master cylinder to the clutch pedal. If you rotate it, it adjusts the height of the pedal giving alot more travel!
Wicked.
