Can I just unplug/bridge Knock Sensor?

Alright,

Just a quicky, have a new knock sensor on its way for my Gems P38 as I snapped the last one accidentally (dont ask) so at mo I am running with a buggered sensor which makes the car drive like a slug...

So, in the mean time can I just un-plug the sensor or opposite, bridge it out until I fit the new one?

I doubt it - the knock sensor produces a varying waveform (which varies with revs. - and if it detects certain knock frequencies it retards the ignition, etc). Thus a continous condition/voltage from the knock sensor to the ECU (due to your bridging) would still just be seen as a faulty knock sensor.... probably.
