Bonnet keeps popping open

Nope, it's still doing it.
The catch is a brand new one, the cable is fine (not seized) and the release handle works normally with no undue stiffness.
The bonnet is adjusted correctly on the corner rubbers and is straight across the front, the pin on the bonnet itself is greased and the spring moves freely up and down.
The pin alignment is perfect, it goes straight into the middle of the catch when you close the bonnet and there's the usual solid "ping" as it engages the latch.
But, drive down the road and five minutes after you set off the bonnet bounces up on to the safety catch.

Just somethings to think about.
In a previous post you have talked about fitting a pedal lock of the XEng variety.
Did you have to move the in cab bonnet release catch to fit the pedal lock? some do.
Inside the truck "How much do you need to lift the bonnet release catch", is it just a very small amount of movement to release the bonnet if so this suggests too tight a cable needs some slack in it.
Have you re-routed the cable and it is interacting with the clutch pedal releasing the bonnet.
Is the cable too tight and activating the clutch with your foot you are pushing the carpet down pulling on the cable releasing the bonnet.
Is the bonnet release catch in such a position that you are catching it with your foot releasing the bonnet.
Is anything else interacting with the bonnet release cable along its route to the bonnet locking mechanism that will cause a pull on the cable.

Well, l spent some more time on it yesterday and it looks like the problem was that the step on the bonnet pin was worn where it contacts the locking catch.
l've moved the pin round 90deg and it's been fine so far, done about 30 miles today, here's hoping.

The locking mechanism is probably worn, loosen the large nut at the top of the locking pin on the bonnet and using a screwdriver in the slot at the bottom of the pin, rotate it about 90deg either way.
Then tighten the nut while holding the pin in position with the screwdriver.
This will lower or raise the bonnet slightly depending on which way you turn the pin, but 1/4 of a turn is negligible, l couldn't tell any difference.
