One of the studs holding the exhaust manifold on was stripped and
barely holding on and has now disappeared into the distant dust of an
isolated road.

I think the stud was about 8mm. Is it possible to drill it out and then
tap it to 10mm or whatever the next size up is? Or should I take it to a
garage and let them fit one of those "helicoil" thread repair things? Or
is there another alternative?

Thanks

I would helicoil it, that way you still have a chance to use a larger
stud later if any further problems arise.

I've also made M9 studs up to replace stripped M8 ones but unless you've
got a lathe and M9 taps and dies this is probably a bit difficult for you.
