I drove 20miles down the motorway the other day, the same route I always drive to my local pay and play,

On the way there it sat just below half but coming home was sat at half way, until a uphill stretch of about 1 mile where it climbs every time I drive up,

Not there now thermostat in as it was playing up a few months ago and I've never got round to replacing it yet,

I have an electric fan,

My rad is the cleanest it's ever been but it's had rad weld in to fix a leak so I am wanting to replace it this week,my problem been it sits at what I belive is running temp, but when it climbs it's quite fast I them back off and slow down, it cools down quite quick as well tho, also it runs noticeably hotter on a hot day,

And I was thinking maybe my gauge isn't quite right?

I had similar symptoms and it turned out to be the pump, for the sake of a few quid and an afternoon tinkering it may be worth replacing it

iirc the 300tdi has a bypass valve which when the stat opens, it closes off the bypass.

by removing the stat you are probably getting a fair bit of coolant bypassing the rad.

i'd buy a new oem/genuine stat sharpish as the 300's don't like getting too hot.

btw mine sits at just over half :)

It dint get that warm,

I put a new rad and stat on a few weeks ago, and another intercooler, it now sits a shade under half, it still rises on a long uphill but only small amount,

I'm going to get an aftermarket temp gauge cause a landrover on is as reliable as a cheep Chinese watch
