You need to pressure test the coolant system to see if it is losing pressure, if it is check for external leaks, if none then you probably have internal cracked head/injector sleave which can be confirmed with a sniff test.

I've never known any parts warranties to cover labour costs unfortunately. If the garage had supplied the part then you may have been covered by them but no garage will cover labour for own supplied parts.

A common water leak on the TD5 is the screw in plug behind the centre of the exhaust manifold, this evaporates as it leaks out.

I put some leather Recaros in my first Defender and hated them, the high side supports of the sport seat made it very awkward getting in and out so I soon reverted back to standard seats and never felt the need to upgrade in all my other Defenders thereafter.

TD5 or V8, sounds like you've blocked an oil gallery to the rocker shaft IMHO.
