The engine will certainly not cut off, with a fueling issue. But you can end with a reduced power with no warning.
No diesel smell ? If so can be a leak, and diesel can burn.

The issue, is that can be a fueling issue, from the fuels pumps to the injectors.
You have instable rpm, I will suspect the HP fuel pump first, check if there is no leak.
Fuel injectors can be tested, leak back test can spot wrong ones.
Idle should be around 780 rpm.

Check the fluid level first, if it’s low, check if there is no leak under bell hosing. Slave can leak.
If you suspect any leak, keep a bottle of fluid and a syringe in the Car.

I have tried oil filters from many makes, you wont have all the joints, at least the big one and some others of incorrect size for you car.
I never replaced the small joints in 7 years.

So I think the blanking plate don’t fit, so the clamp won’t fit too.
I was suggesting to put the right a blanking EGR part.
As I understand, that wire can be damaged, look if you see anything obvious.
With the engine on look if the alternator pulley isn’t slipping, and not making strange noises.

13,6V is a low with the engine on, your Battery isn’t charging like it should. The alternator or its pulley can be the issue, or the battery.
No strange noise indicating a sleeping altenator pulley ?

When you put the new brake pads, they should fit easily, if not you have forgot do some cleaning.
