I think you can remove the internal centre bulkhead, and fit a stiffener bar, which opens up options of fitting seats that go a bit further back, which will give you a bit more legroom.
On the other hand, it won't deal with the fact that the drivers position is quite tight on all sides except to the left.
Or with the pedals being a bit off centre to the driver, which many people find makes them an uncomfortable drive.

What seats do you have? The factory lift out style take up the least room. And as you'll be able to see, there isn't much space to be promoted.
A smaller steering wheel might help, but might make the steering too heavy. Or you will need to look at more serious mods. Such as cutting the bulkhead and fitting seats that slide further back as per @Turboman suggestion. But this is a one way mod that you can't undo and will only work on a hard top or full tilt, not a pickup and will prevent it ever being a pickup.
You could also look at moving the handbrake lever, but you'll have to R&D it a bit, And that is probably it. If you have door cards you can remove them to give a bit more knee room. But ultimately it you don't fit, the brutal reality might be, that it just isn't the vehicle for you.

You could fit later 2a / 3 sliding seats but you would need the runners as the seat base will slide back more and you could remove the rubber pads from the back rests to give you an inch or so more.

SWB or LWB? More space in a LWB, so mud stuff rails will work with a defender seat.

A lot depends on your build, raising the seat some can help with leg room but only any good if you are not too tall because you will end up ducking to see out under the top line of the screen.
driving with my knees wide apart gives enough legroom,
re post 2, here,with some ingenuity and fettling is a possible fix,88's have the fuel filler hose in the way so not as straightforward as this one,(pic not mine,from fbook)
