Glad you got this sorted. I thought maybe I was being over paranoid with mine and had soaked the plug with a wet boot or something. Until last week when I started lurching on the m4 and had to pull onto hard shoulder!!
Just to add some info into this thread, mine is an 03 defender. Nanocom suggests no issue with pedal and I’m pretty sure there isn’t. Really seemed it was shorting and only in the wet. A few have had this problem! A defender that doesn’t like the rain eh!!!
Here’s the loom made with trailer cable. If no joy with paul, simtek supply all required.
Note - gold tipped ecu end

PS If the paul you refer to is paul ifrom landrover connectors on ebay,
He is tip top, think he was ill a while back and was out of the game,
We have used him many times, mainly cos he posts quicker than the other suppliers
