On the replacement I got, the green cap on the pressure switch has come apart. As these are directly wired to the plug, can I just use the switch from my existing block and cut/solder the new one in place with shrink tube?

You can get the pins out of the plug or cut and solder.

The replacement what you got? Fitting a pressure switch to the plug takes about five minutes. Take the inner cap from out of the plug carefully flick back the tangs holding the connectors in place and pull them out. Stick connectors from new switch in and replace inner cap. Simples.
