So, I've found a replacement bulkhead for my 300.
As the 300dash is falling apart, I may as well fit the dash too.

Do I just want the bulkhead, the dash, and the wiper mech off the td5, or do I want the loom (and other bits?) too?

I know there are a stack of threads about this, but I'm still unsure! :(

Depends what age Td5.

If it's the 1998-2001 type then you can just fit the later dash in its entirety and use your old loom and clocks (or upgrade the clocks to the Td5 style) as mostly everything is in the same place - you may have to cut a few holes for the loom etc. but nothing major.

If it's the later 2002-2006 type then all the switches had moved etc. so you may find it easier to use the Td5 loom, suitably modified to hook up to your 300Tdi wiring. Or modify the 300Tdi loom to extend the wires for switches etc. to the centre console using the correct plugs etc.

As above. Seems pretty daunting but I put a td5 dash into my 90 with the original loom. Complete with td5 clocks and warning lights. The only thing I have kept is the original hazard warning switch and cut it into where it previously was. Just because I wasn't too sure on the wiring for the td5 hazard switch compared to the old 90 switch.
