So - I have a new to me 2006 Defender 90. I thought it had differential lock... Which type?

I see people her talking about airlock diffs, automatic torque biasing (ATB and good on my F3 racing car but not really good for off-road - Ill tell you why one day) and locking differentials.

I thought it had one anyway - or is that just the centre diff?

Centre diff locks for when it is slippery. If you want axle lockers on a Defender, you have to fit your own. Plenty about.

Defenders have 3 diffs. But Land Rover has never offered locking or even LSD axle diffs only a locking centre diff.

From Td5 models onwards Land Rover did offer traction control. It uses the ABS and essentially simulates a locking or limited slip diff.

ATB’s can work very well off road. Full locking diffs have drawbacks but do work for specific terrain and uses well.
