this has been low down on my list of things to do but I do not get any warning chimes when the seat belts are off and driving, the doors are open, 3 amigos turn on, you get the point. does anyone know how to fix this? Any help welcome.

Neither do I.
I did use Nanocom to turn on the seatbelt warning but ir was a P.I.T.A so I turned it off again

Most probably the speaker is dead or there's a bad contact on it's circuit...on the back of the instrument pack

What 'chimes' should get?
I also have a Disco 2 (mine's 2000) and get a warning if I leave the lights on but not if I haven't got the seatbelt on. tbh, I'm not sure what else I should be getting and whether I am or not.

Can't help you there as I don't know myself but the instrument panel is removed from underneath the sterling panel.

Seat belt unfastened chimes are market dependent. Not required for the UK so will be turned off.

My speaker was just disconnected. Worth a look as it is very easy to get to. Just remove the top of the instruments (speedo clocks) and you see it at the back of the clocks
