Flicking temp gauge causing limp mode

Defender 110 TD5 2003 - I have an intermitent electrical fault which causes the engine to go into limp mode momentarily but occassionally leads to overheating. On long hot hills the engine coughs and the temp gauge flicks to hot and back to normal but sometimes takes time to return to normal which is when it overheats. Having just spent the last year in southern Africa I was plagued with the problem. A garage in Botswana cured it with a new relay under the drivers seat but the problem returned a few 1000 miles later and a new relay didn't cure it and I had to live with it. Near the end of the adventure I fitted a new temperature sensor and thought I had finally cured it but no, this weekend in Devon it did the same thing. Please does anybody have any ideas as to what the problem is (PS - the vehicle has been chipped)

Thanks - the land rover garage in Botswana reckoned there were no faults showing but it hasn't been checked since - this may well be the route to go, cheers
