Hi i had the same problem when i had my 300tdi, ****ed about with it for a few days then i walked away from it rather than take a hammer to it about a week later after i had calmed down i went to try again and it was working perefect.

you say that you have done a conversion what flywheel did you use a duel mass one or a solid one if you used a solid one did you fit the spacer or use the modified thruss bearing
but other than that i have found that getting the air out on a td5 system is pig in the end i fitted the slave cylinder upside down (the bleed nippelat the bottom) and then back bleed the system but when i did the clutch on my td5 disco i had loads of problems had the gearbox off 3 times before i found that the friction plate was twisted

Ive had half a pedal a used the caar for a day then it just gets rubish again. I used the dual mass fly wheel and a ap driveline clutch kit. its rearly starting to anoy me now. Dan

I have had problems like this on other vehicles, and sorted it by using a vacume or air pressure bleed kit. Halfords do a ok one that uses the air out of a tyre to force the fluid through the system. This may work? Have no idea about clutch system on discovery as only just bought one just over week ago so may not apply to discovery..

Try a Gunsons Easybleed - works off air pressure from the spare tyre. I haven't used it on my Disco but have on other cars when bleeding brakes etc.

i also got one of them and they are really good and very cheap ! makes bleeding brakes a lot easier to but keep ya eye on the fluid container ! if you let it run out of brake fluid you can get air in the system again. this should get any air out of the lines a lot better than just pumping the pedal :D

Had a similar problem on a 300tdi. Would not bleed. Gave up. Came back to it the following day and it had bled itself, ie it had self bled.

You could also try holding the pedal halfway down overnight by wedging it with a lump of wood. Did this with a motorcycle front brake that wouln't bleed (using a cable tie not a lump of wood), the system bled itself overnight as the circuit was half open and just let the air work its way up to the top. Not sure if it works on a Landy but it might be worth a try??
