You press on one side of the white ring, I think it is at the point where there is a piece of plastic inline with cable. If not it is opposite this point.
Rarely get to see it due to dash in the way.
In the attached pic it is the prong sticking up on rh pair of cables that holds it in place, there is other versions which the parts are white.
The plastic clip locks in the groove you can see on back of speedometer centre piece.

sorry for the late response - Dad's taxi was called in to use.

I've now had another look and, yes, you do push on one side. I'm guessing that I was probably squeezing both sides at the same time which seems the correct thing to do (particularly when you can't really see what's going on). My replacement has the single lever which should be a lot more obvious for anyone removing it at a later date.
Anyway to, hopefully, help folk in the future I've attached a few photos. The first photo is with the cable in place, the second shows the part to push (the grooved part) and the third shows the tab which is pushed out when you push the grooved bit, It's all dead simple when you can actually see it!

Good photos, it will certainly help me if I need to remove my cable. I've looked at it many times and wondered how it disconnects from the speedo head. Thanks.
