It's very possible to stop leaks on a Land Rover my series 2 doesn't leak at all and neither does my 1991 defender 90. My 1984 110 however does. Dunno where it's coming from but it streams in from behind the dash board on the passenger side.
It'll pay in the long run to keep the chassis pristine. Not only for MOT's and safety but for resale value.
I've read a lot of reliability issues specifically with puma defenders. In components that have been used for decades that never caused problems before are now causing issues. Whether it's cheap steel being used I don't know?
The clutch shouldn't feel overly heavy only slightly more so than a mid ranged German saloon. The brakes should be responsive and I don't feel they need a lot more effort than on a normal car.
The bolts may have been swapped for stainless bolts for ease of removal however if they start to rust it might be good to investigate why the bumper was removed? It doesn't interfere with a great deal in terms of maintenance. Other than that just looks like your everyday commonplace defender.
