Any ideas what might be causing this? PAS levels appear fine, as do tyre pressures.... hmmmmmmmm?

Be careful with the backlash adjuster - you can damage your steering box if you don't do it properly - to be honest it should be set at the factory or rebuilders and should not need touched that is why they put a dab of seal paint on it.
Get in amongst all the steering components and check the drop arm, check it is tight, and has NO play, then check the ball joint, it should not move from side to side, rather is should only swivel on the ball, if it can be rocked it's fooked, same for the drag link ball joint. Then check the tie rod ball joints too.
