As I appear to have buggered up some of my brake fittings does anyone know what thread sizes I should be using???

I've looked around and the most common seems to be M10x1, are these correct for my 1987 classic???

They went back to UNF for a short while for some reason that I have forgotten. Most likely M10x1 though.
 
Simple test. 3/8 UNF will screw into 10x1 loosely. 10x1 will not screw into 3/8 UNF.

3/8" UNF 0.375" = 9.525mm. 10.00 mm = 0.3937" so there is a 0.5 mm or so size difference. Thread pitch is very similar. Make sure you do not use 3/8" in 10x1 it could strip out. All brake pipe is 22swg 3/16" diameter there is no metric brake pipe. If you use a cheap flaring tool be careful, they are good for copper content pipes, but need extra care on the steel brake lines fitted to most vehicles. Make sure they are clean and you get a good grip before trying to flare those. If you are using male/female joints old to new pipe.

Most of the pipes on my car seem to be copper, soi guess have been replaced at some point. I was going to replace them with copper again.

I have bought a sealey flaring kit, so I'll see how I go and if I can''t make it work I'll go down the pre-made route!!!

That kit should be fine on copper. Just make sure it's clean and you get a good grip.
