What's the advantage of running a cooler thermostat on a V8?

I'm asking cos years ago, I had a Freelander and bought a new thermostat for it and never got around to fit it. Apparently, it'll fit a Disco 2 but it's got a lower opening temperature. I was hoping to use it rather than buy another one!
