A shovel and some matting for under the wheels has always done me. Will get ya out of most situations ya'll find yaself in on farms etc.
If ya really worried bout getting stuck then i'd go the tifor route as above, might be a bit harder work but reliable and a damn site cheaper. Pulled many a rover out wi tirfors in the past and never had one fail.

what sort of terrain are you likely to be driving? wet, muddy, hilly, what sort of mud is it clay, sand, peat, soil?

Is there anything around to anchor a winch to? Most winch cables are around 75-100ft long. Are you gonna need to carry your own winch anchor? if so the type of anchor depends on the type of mud and terrain.

Any winch above 6000lb can shift a landy in normal mud and with a little scene preperation a vehicle bogged in clay. It's knowing how to work it, what sort of resistance you're gonna encounter, and the length of cable you will need that dictate what winch you get.

Most people go for a rating of 8000lb and upwards.

Do you know what your doing with a winch? Get it wrong in the middle of nowhere on your own and you could kill yerself.

As you are asking this question it would lead me to think that you have little knowledge on safe winching practice. As such it sounds like you ought to go on a winching course before buying a winch.
