Can I, and if so how, do I fit an electric oil pressure gauge to a 300tdi and can I keep he normal red dash oil light?
 
yes you can.

You will need a T piece off where the oil pressure sensor is. I got mine from Croytec. I bought a set of VDO gauges from a 1996 Audi 80 as they are almost an exact match to my 300tdi (1996) with exception to the red needles. the gauges included oil temp and oil pressure and voltmeter, picked them up for £50.

The sensors screw into the T piece and then plug into the back of the gauge. not wired mine up yet, its on the to do list.

I bought a VDO gauge and like you wanted to keep the low pressure warning light so bought a sender with 2 terminals (expensive :mad:). The big problem then was that the sender was too physically large to screw into the block where the old sensor was as it fouls stuff nearby. I have now bought a T piece from Demon Tweeks (as you can't just get an extension) plus a blanking plug for the other take off.
The easier/cheaper way would have been a normal sender then use the T piece plus your original switch for the low pressure.
You need 0-5bar for the gauge and sender and the thread is M10x1

You are going to have to see what clearance there is around the oil filter. Basically that looks like it goes between the filter and the block and then you plumb the oil pressure sender into the side of it. Have a look underneath to see if there's enough room for the sender without fouling anything. My sender definitely wouldn't fit as it's wider than the plate is thick.
