Ive wired up a volt meter and oil temp and pressure all vdo volt works fine however my oil pressure and temp move up to 0 with ignition but then wont move at all

Yes my pressure sender has g and wk on it i take g for gauge no idea what wk means though

For an electrical sender unit I would think the resistance would change with pressure .
So use a multimeter set on resistance and measure ohms with engine off and then start engine and the resistance should change , probably drop which would equate to a full scale reading
