5W-30 remember your 3.0L has a DpF and the it must be a C1 spec, this means low ash and helps the DpF not clog up to fast.

It seems to me I need to link the other heater pipe to the intake manifold to get the flow correct, this is at the rear of the engine, and I still have to fit the heater valve in there.

That is a tough question, I would suggest flushing the complete system while you are at it, that said, about two litres would do the job, don't use brake fluid from a open container and what that means is if the seal is cracked don't use it, unless you are cracking the seal before you doing the job.
