Hi, my 2.5 diesel (m51) from 1999 is losing about 3 finger widths of coolant every few weeks. The level doesn't seem to drop lower than that. There are no visible leaks.

What would be some things to check to find out where the coolant is going?

Look under the carpet in the right hand footwell for signs of coolant.
 
Feels dry under the carpet.
OK so it's not the heater matrix O rings which are a common failure point. Splits in the header tank are not unknown and a defective pressure cap will cause loss of water. Otherwise it's down to observation, check the pump is not leaking.
 
You can get UV dye to go in the coolant and then use a UV torch to see where it is leaking.

As Data says, heater matrix, o-rings for said matrix, coolant hoses (check the one behind the engine by the bulkhead with a mirror), expansion cap and possibly the radiator itself.

Worth pressuring each cylinder via glow-plug hole and with valves shut and see if any coolant comes out the expansion tank. If it does then head-gasket or more likely a cracked head.
