I just noticed that the side steps on my 58 sport have corroded to the point large chunks of rust are falling off them. It's a bit of a shocker considering the overall good condition of the vehicle which has only covered 39k miles so far.

Has anyone experienced this and Will the land rover extended warranty cover this?

Mine were in a similar condition but for 18 odd years can't complain. I stepped on the drivers side one and the bracket holding it onto the chassis sheared off, decided to take them off. 99% of the box section that supports it had corroded away.
Check the documentation but it's always worth a try, the worst they can say is no!
