your best bet is to get a winch mounting plate like these Mail Order 4x4 Winching

I dont think it'll fit. My series 2 appears to have a series3 front on it and the grill is in line with the front of the front wings so i reckon i'll have to adapt one. Are the defender chassis rails the same width spacing as the series 2 chassis

yep they are the same width....... if your 'series 2' has a flat front its got either a stage one or a 90/110 front end as the front panel on a series 3 was set back
