Could someone please tell me what is the best "High-Lift" jack on the market and where could one find/buy one? How much too?

Mines a Jackall, Paddock sell them for about £45 - £50. They also do Hi-lift as well, both are good bits of kit. Beware of cheap nasty models, personally I think these cheap ones are untrustworthy.
Buy a decent one and it may not cost you your life.
