Mesh looks pretty torn up on the passenger side, is there a metal flap on the outside?
Drivers side they seem to have put a plate on the inside, on the dash. Looks like you still have the standard holes. If you want, I should think you can get all the standard flaps and mesh.
Try the usual suspects first, Paddock, Craddock, etc. If you want secondhand, breakers or places like Dingocroft might be able to help.

Its about 25 years since I had a series3, but on my 90, you can see the mesh at the back of the dash just like in your passenger side pic.
Ignore the arrows but isn't this how it should look rather than a cut out

Apologies, you are quite right. Just been outside and had a look. There is a plastic grille in front of the vents. I shouldnt think it is vitally important, though, unless you are very keem to get it perfect.

Check if they are still made, they may fit vehicles up to quite recently. Indy parts people are sometimes cheaper than dealer for genuine parts. Like I said ring round Paddock, etc. Google search, ebay etc. Failing any of that, look for second hand.
