I've just done it (finished last weekend) and would agree with the above. Label every wire lots of photos and a volt meter. Also label the wires which go no where as I found these cause the most confusion.
Also buying all the parts you need first will help, as this will mean its less time between stripping and reassembly and it will be fresh in your mind.
I made a list of parts that needed to replace with the swap; even still I ended up ordering more parts. (I list have the list with part numbers, send me your email and Ill send it over)
In regards to your sequencing; removal of the bulkhead with the engine still in place is fine and I found it didn't get in the way, however removal of the engine with no bulkhead, wings, wiring loom and others bits would be ideal. As this would leave loads of room to disconnect the gear box and remove the engine. Had I not been moving home I would have taken my engine out at the same time also.
