Brough a car with coils fitted and have now changed to air, when I park on a slope and stay in the car, turn the ignition off the car tries to auto level instantly, is this normal?

Are you sure it's not just dropping to access mode?

No, just been out and tried it on level ground and it stays at standard height. Goes to access height when I select it on the level switch.

If I park car on an upward slope the front drops as if it,s trying to match the rear as soon as I turn the key off.

It's normal. It will also automatically level every couple of hours and everytime you close the trunk door.

Every 6 hours when parked and whenever you shut any door.
