When the engine is warm where should the dial on the temp gauge be pointing at? Mine normally stays at 1/4 way but can point at exactly 1/2 way when really pushed.
 
Mine is at half way but only after I changed the thermostat, which was stuck open.
Before that it was similar to yours and sat at 1/4 unless I did any motorway trips when it would eventually creep up to half.
Its worth changing the thermostat as its a quick, easy job. Warm up time is quicker too.
If the bypass hose shows any signs of age or perishing, change that too. You are half way there anyway if you are doing the thermostat.

I also get the oil pressure light at idling when warm, should I leave the thermostat as is until I find out what my oil pressure is to prevent any risk of cooking the engine? Even if left idling for 20mins it never creeps more than halfway.
