I have a 1989 90 I'm wondering what security similar vehicles run, putting a new chassis and v8 engine in so its going to be more desirable to thieves.

Skytag, Disklok, heavy duty pedal lock that can't be bypassed, Cat 1 alarm with full interior and exterior proximity sensors, hidden fuel cut off switch, armoured bonnet and door hinges. Also think about a good deep ground mounted anti ram barrier to stop it moving from the driveway.

That little lot is a good start.

I'm also worried about people coming along and picking it up and putting it on tow trailer but I guess there's no protecting from that haha. I currently have a hidden fuel cut off switch but want to install an alarm, I'm unsure on how to wire this to the old loom, might have to look at having it installed by a professional which moves on to point two does anyone have any decent contacts for this? I'm based in north east and midlands.

Someone taking it on a lowloader is where an alarm and a tracker with geofencing comes into its own.

Any alarm is only as good as the instal mate - bear that in mind. You can spend £1k on an alarm but if it's ill-fitted it's a complete waste. Needs to be Cat 1 and have all the prox sensors to make worthwhile, do your due diligence and find a quality installer that have good reviews.

Get a tracking device as well.
 
I think if they’re that determined to get it, they will, and bypass all security measures put in place. If all my security fails or is sawn off, I have a tracker. You can only do so much. I’ve tried to disguise it as a Skoda, don’t waste your time, it doesn’t work.
 
I was trying to be funny! You’ve clearly not tried disguising your landy to make it look like a Ford Fiesta or other desirable vehicle, e.g corsa? I have a dislok, pedal lock, Immobiliser alarm and I leave the low range gear box in neutral to confuse. If all that fails I have a tracker. If I had a garage big enough I’d put it in there. These thieves scout out vehicles and come prepared. This crime of landy theft is growing and being vigilant and putting visible security on every time and everywhere I park is a given.
