It really should not take you a day. Within an hour you will have have the pedal box out and and stripped down. Carefull with the union nuts, if you round them you are then in trouble because you will then need to starting replacing pipework etc...
Put the new cylinder in, be carefull to make sure that you don't contaminate the pipe, or the cylinder when working on it.
Connect it all up and fill the cylinder, open the bleed nipple, and press the clutch fully twice, fill the cylinder again, now get under the landy and have someone push the pedal to the deck again and nip up the bleed nipple BEFORE the clutch is released. Open it again and have the clutch pressed fully again, tighten bleed nipple then have the clutch raised. Top up the fluid after about every 2. Repeat once more and that should be you.
You can put a piece of clear pipe over the nipple, drop the other end into a jar of clean fluid, and when the last few clutch depressions are made, watch the pipe for air bubbles. To be honest you will never really get any air after 2/3 top ups and 3/4 full depression of the clutch.
