I know there's been a few previous threads on this.

Advice on best route? Cut out and put in SW windows, or hunt for replacement SW side panels to swap out the hard top sheets?

Any good sources for replacements if that's the best route?

The quickest and easiest route will e to source and fit sides which already hvae them fitted. However sourcing decent condition sides it not likely to be easy.
It should be very easy to fit window, all you do is cut the appropriately sized hole and then either rivet the frame in place or they are held in place with a rubber seal similar to the windscreen depending on the style of window you use.
However fitting your own windows relies very heavily on being able to neatly and accurately cut out the window aperture.

I saw a D110 getting done at the garage I use, with these already fitted. Pretty smart, wonder if they replace the whole panel? o_O

I have the Landy Glass fitted as shown by Turktowner, and they don't replace the whole panel, as they are bonded to the side panel, but it does mean you can cut out a square and wouldn't need to be too precise.Just need to remember what ever you cut out, it will be visible on the inside, and if you have CSW interior, this is profiles to suit the standard window set.

Landy Glass provide a edging beads to fit to the aluminum edge which makes it look nice and neat.
