Quick question though not sure if it's al just a disco thing but when traveling at speed mostly on motorways when returning the steering wheel tonthe centre there is a wee kick from the steering wheel, is this normal?

yep more than likely you need to adjust your steering box

How will I know when's it's adjusted correctly, is it a case of trail and error?
