I haven't reached this point in my vehicle mods yet, but I wanted to
ask the question anyway.

Does the use of wheel spacers place extra stress, and thereby
wearout/ruin wheel bearings?

I'm eventually planning a suspension & body lift for my tracker and
install some larger tires.

The spacers I have in mind are from Rocky Road Outfitters and they
extend each wheel out an extra inch...

Just wanted to know before I get there...thanks.

Yes, but it may be a case of the bearings only lasting 5 years instead of 10.

Steering will be a bit harder sice more tire it scrubbing on the outside and you'll find it will take more lift to fit the same
size tire with it sticking out farther, especially in front with the steering.
